Game Day Healthy Buffalo Chicken Dip
Gluten free game day appetizer (can be dairy free)
- 3 cups shredded chicken (meat from 1 whole rotisserie chicken)
- 1 T avocado oil
- 1/2 onion chopped
- 2 cups baby spinach chopped
- 1/2 cup mayo or cashew cream (Primal Kitchen mayo made with avocado oil green label)
- *see below for cashew cream recipe
- 1/2 cup Franks Buffalo Sauce
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried dill
- pinch of salt
- 1/2 c cheddar cheese (divided)
- ** Dairy Free use Violife non dairy cheddar shreds
Preheat oven to 350 degrees. Use avocado oil to coat bottom of baking dish.
Heat 1T avocado oil over medium heat. Add onion cook about 2 minutes. Add spinach and cook until wilted. Transfer onion and spinach to a large bowl. Add in mayo or cashew cream, buffalo sauce, garlic powder, onion powder, dill salt and cheese if using. Mix together until well combined.
Transfer dip into prepared baking dish - Top with additional cheese (optional)
Bake 30-35 minutes
Serve with Siete Tortilla Chips
QUICK CASHEW CREAM
- 1 cup raw unsalted cashews
- 1/4 -1/2 c water
- Pinch of salt
Place cashews in small pot add water to cover by 1 inch
Bring cashews to a boil, cover and turn off heat. Let sit for hour
Drain and rinse cashews. Place in blender or food processor. Add pinch of salt
Blend using 1/4 to 1/2 c of water. Be sure to scrape down sides
Blend until creamy smooth consistency
Store in airtight container
